Peeling Knives

A Peeling Knife is a small kitchen knife with a curved blade. It is used to peel fruit, potatoes or vegetables without losing too much flesh. The blade is narrow so that it can follow the outer circumference of a small potato, as well as the inner circumference of an apple core. Peeling knives are most often used without a board and are simply held above a pot or bowl.
